I Pinky Swear

So the storm is starting to settle, metaphorically speaking and my boyfriend has been so amazing and so supportive! I could even go as far as saying I'm super proud of him!

I don't wanna make a sob story or pity party out of anything, but in my past I haven't really had anyone really stand up for me before. It sucks but thats life.

Getting back on topic..
My boyfriend handled it all very well and without getting into the story (sorry folks I cannot divulge it's just too much for the world wide web...you'll survive) he stood up for me! The fact that this whole situation is happening sucks balls but today my boyfriend made me love him even more...if that's at all possible!

He truly made my heart smile!

That's basically it peeps! I wanted to tell someone so I thought I'd share it with everyone!

I will be making more cupcakes soon and will also be getting the creative juices flowing to come up with an idea for a Birthday cake!

I'm outti! Night peeps!

Cheers,
Jenny

Guess who's back? Back again!

If you didn't already get it, I just referenced a good old Eminem song! Why? Cause I'm in a crappy mood from a weekend away (that really should gone smashingly well, besides the HUGE amount of pain I was in) and feel like blaring some angry Eminem song right about now!
But.........I think I will take heed and follow the lovely advice "If you can't say anything nice, don't say anything at all!"

So, today is going to be a picture post, except for the cupcake recipe that I wanna share with you afterwards!

Notice a smidgen of icing on Bella's lip? Ya...she was helping Mommy!

My love bought me a GREAT cupcake/cake carrying case! Now I won't have to get
creative on packaging cupcakes anymore!
O-M-G! I'm actually scared right now! He lives!
(IF you are a MJ fan and find this offencive...IN YO FACE)

Almost like a Glamour Shot eh?

Bella's first encounter with the turtles from Turtle Island!

d
I get that dogs sniff other dog's butts to say "Hey...how you doin'?"
But is it also customary for turtles?

Bella chillin' by the lake! That's how she rolls!

Alrighty then. I made some really amazing cupcakes Friday, before we headed out to the cottage.
I've made this recipe before but none of the family has gotten a chance to taste how great they really were. It was all just a myth till this weekend. Well there were no left overs...just sayin'!

Apple Cupcakes

1 1/2 cups Granny Smith (apples peeled and grated)
1 1/4 cup of all purpose flour
3/4 cups granulated sugar
1 teaspoon of baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 large eggs
1/2 cup of vegetable oil
1 teaspoon of vanilla extract

1. Preheat oven to 350 F. Insert liners into the cupcake pan.
2. Combine the flour, sugar, baking soda, salt, and cinnamon.
3 Add the eggs, oil, vanilla and the grated apples to the dry mixture until fully integrated.
4 Fill the cupcake liners with the batter. Bake for 20 - 25 minutes or until a toothpick inserted in the centre of the cupcakes come out clean.
5. Cook the cupcakes and Ejoy!

Maple Cream Cheese Frosting

One 8 ounce package of cream cheese at room temperature
6 tablespoons (3/4 stick) of unsalted butter at room temperature
3 cups of confectioners sugar
Add 3 tablesoons of maple syrup (I add more usually)

1. Cream together the cream cheese and the butter with an electric mixer on medium speed until smooth.
2 Slowly sift in the confecttioners sugar and continue beating.
3. Mix until fully inegrated.
4. Add maple syrup, then mix again utill you have desired taste.

Well peeps, I hope you give that recipie a try! It's a fave so far! I love love love mixing flavors together! I'm gonna have to get creative again and try something new...hmmm...or try a fave on Pinterest! Remember...follow me and I'll follow you on your blog!
Good Night!

Happy Easter

I hope everyone has a great day and gets to stuff their faces full of chocolate!

I'm out of town where there's barely any cell service so here's hoping my well wishes post!

I'm super sick in bed not eating chocolate, so everyone please eat tons on my behalf!

Over & out!

Cheers!

Dirty 30

Well today my boyfriends bro turns 30! It really doesn't faze him though.
Men don't usually have to do much as they grow older, but us women have to dye our hair, make sure we're moisturising every inch of our body and wear a bra 24/7 so our boobs don't fall to the floor anytime soon. Yay womanhood!

So I threw on my other Johnny Cupcakes shirt (ya I'm a Johnny addict...but I promise I won't be wearing one tomorrow...I haven't recieved that free shirt yet from my previous post) turned on some music and started baking. I was doing what was making me happy!

The bf told me just to use a boxed brownie mix with the icing that comes with...errr....borrrrringgggg.
So, I had some caramel squares put them into the middle of the brownie mix before throwing them into the oven. I wanted to nix out the chocolate fudge icing that comes with the box and made buttercream. But instead of leaving it as is, I shaved some chocolate and mixed it up with the buttercream. When the bf got home he insisted on taste testing one because there was an uneven number of cupcakes. That's the general rule right? Or has he been fooling me all along?
Anyways, apparently they tasted amazing! I love taking something so bland and turning it into something so yumdillyumcious!

They look better than the picture seems to show.

I wanted to make fondant decorations but I didn't have enough time. Boo.

So, we headed out to the bf's parents for the Birthday dinner.
Of course Bella love car rides. It seems like she's always in her element. You can tell in the picture that this is where she wants to stay!

Check out the cake below that my bf's mom made for his bro!
I've learnt alot from her about fondant and buttercream.
 She's the greatest!

This guy has a HUGE collection of Coke memorabilia & even wore
his Coke top we got him for Christmas.

Well, I'm off to bed folks.

It's Like Playing With Playdough

I have to say that I absolutely LOVE fondant, but the real question is does it love me back?
I'm pretty good at making flowers and such but when I have to wing it and get creative I always question myself.
It's like playing with playdough and to be honest, as a child, I really sucked at it.
So, for inspiration, I threw on one of my fave shirts from Johnny Cupcakes (I wish good old Johnny would pay me in tops every time I mentioned his shirts of awesomeness) and away I went!

So, I'm preparing for some Easter cupcakes that I'll be making Thursday by creating carrots out of fondant. They will be apple pie flavoured with maple cream cheese frosting. Eat your heart out ladies and gents. I've made them before and they are the bomb digity (did I just say that?)!
I'm also preparing some Hello Kitty fondant creations for my bff's daughter who loves loves loves Hello Kitty (and sadly so do I...don't judge me). So, I'm gonna make her a little surprise!

Wacky looking carrots! I know!

So after that I really had to sit down and rest (ya right), out came Bella from the washroom and somehow got ahold of a face cloth (where she got it is still a mystery). This dog will out run you like nobody's business. If you catch her it's cause she's letting you.

I also want to prove another point at how obsessed I am with cupcakes.
I bought this awesome collar for Bella from Addison Logan. She sells and hand makes all these amazing dog collars and she had the most amazing sale recently. So my little Bella cakes had to have it! She's a spoiled little *beep*!

Yes she's sleeping...easier to take a picture that way. It's hard to keep her still. This is usually her crashing from exhaustion.

I also decided to put making my own cupcake liners on my to do list. I will post up my results once I get crackin' on that.
Tomorrow is also my boyfriends brothers Birthday and I was just made aware that I will be baking chocolate fudge cupcakes for him. Good thing I love baking so much!

Lastly, I would like to get a following going, so if you like my blog sign up for my email notification. Also, if you have your own blog, post it in the comments and I'll post a link to it on my site. I'll scratch your back if you scratch mine yo!

Cheers,

And so it begins *insert drum roll here*

*tap tap*
Ahem...
Is this thing on?

So, it seems now a days that everyone and their dog have their own blog (hmmm Bella really should have her own..she'd probably get more hits than me).

That's right folks...she'll steal your heart then make a bloody hairy mess all over your favourite top!
Anyways, I figured that if everyone out there had one, why couldn't I?
I instantly realised what I could make my blog about! Cupcakes!! FREAKIN' CUPCAKES!
I'm obsessed! On my kitchen counter right now I have Red Velvet cupcakes just tempting me to go in there right now and chow down! The darn sugar alone though will keep me awake all night! BAH!

I love love love to bake and I'm actually getting pretty good with fondant and buttercream!
So, it is here where I'll share my fabtabulous (oh the many words I come up with...get used to it) pieces of art and yummy gloriousness! I also want to dabble in the world of cake decorating.

I'm also temped to follow what a fellow Pinterest friend is doing and experiment with recipes found on the site and then posting up the end results. I really LOVE Pinterest. If you don't have an account yet, what the hell is wrong with you? Get with the program already! It's beyond addictive and I lose so much time pinning useless stuff. It's by invite only (stupid crazy in my opinion, but whatev) so if you want one let me know and I'll email you one. I don't get anything out of it except maybe just follow your useless crap too!

So, welcome to my life and the sweetness surrounding it!
I'm outti.

Cheers,

Jenny
